– Helen, Senior Marketing Consultant
“We have a tradition that began with my mother and her mother for Christmas dinner. My mom was not a great cook, but when she did Christmas dinner for our family and uncles, she blew everybody away!
“She passed away in 1970, so one of the ways in which I keep her memory alive for my daughters is to try to duplicate her menu.
“Every Christmas, we would and still do eat the following:
- Roast Beef or Prime Rib, depending on budget.
- Yorkshire pudding (very English)
- Asparagus with Hollandaise sauce
“Plus a Christmas pudding for dessert.
“I am still trying to figure out how she did it. She steamed apples, raisins, suet and carrots along with other ingredients and created a masterpiece, topped with a creamy lemon sauce and flambéed with rum on top! I have looked for recipes for English Christmas puddings for years and never quite perfected it. She did not write down her recipes! She got it from her mom, who was Canadian/German.”

“Inject orange segments with Grand Marnier and then dip in chocolate.”
– Kevin, VP of Business Development
“No one in my family wants me cooking, but I do love cinnamon, and cinnamon goes well with hot buttered rum.”

“My ‘secret’ recipe is my enchiladas. A Christmas dinner family tradition. Everything’s made fresh including beans, guacamole and more! The wow factor comes in the form of a margarita.”
